About International Culinary Center

The International Culinary Center was founded as the French Culinary Institute by Dorothy Cann Hamilton in 1984 and has locations in New York City, the San Francisco Bay Area and Parma, Italy. The facilities include industrial kitchens for hands-on cooking and baking classes, specialized wine tasting classrooms, libraries, theaters, and event spaces. The Center has several renowned chefs as its deans including Jacques Pépin, Jacques Torres, André Soltner, Alain Sailhac, David Kinch, Emily Luchetti, Cesare Casella, José Andrés, and Alan Richman.

In addition to its culinary education, The International Culinary Center has published three cookbooks, most recently The Fundamental Techniques of Classic Bread Baking and the James Beard award-winning books The Fundamental Techniques of Classic Cuisine and The Fundamental Techniques of Classic Pastry Arts.

The International Culinary Center has welcomed students from more than 80 countries around the world.

The global expert in culinary and wine education, ICC has trained such celebrated chefs as Bobby Flay, David Chang, Wylie Dufresne and Christina Tosi.

Whether the focus is Professional Culinary, Pastry Arts, Cake Design, Bread Baking, Italian Culinary or Wine Studies, an ICC graduate leaves with the credentials, confidence and global connections for a rising career.

The secret to ICC's award-winning program?It's trademark Total Immersion through a curriculum with hands-on instruction that transforms students from novice to professional skill levels in just six months, including real-world experience.

The school's deans are cooking legends—such as Jacques Pépin, Jacques Torres, José Andrés—and a low student-to-teacher ratio assures students get the attention needed to flourish.

    We would swim in it if we could! #Regram @chefcasella: The salsiccia e cime di rape (broccoli rabe) for my orecchiette at @iccedu. I suggest you use the same water for blanching your broccoli and the pasta. Think about how much good flavor from the vegetables goes into the water. This is what I call gold. Just like my bean water. #tuscantip #truetuscan

  • or 30 credits toward an Associate of Applied Science degree in Food Studies
